Moe’s Southwest Grill could be the latest addition to Derby’s commercial corridor along Pershing Drive.
The “fast casual” Mexican restaurant is slated to open in the fall, according to an image posted on the restaurant’s website.
Andrew Baklik, Mayor Rich Dziekan’s chief of staff, emailed saying the company is expected to submit planning and zoning paperwork to Derby City Hall in the coming weeks. The city will have to sign off and issue permits before the place can open.
He said Moe’s is eyeing a space next to Leslie’s Pools within Red Raider Plaza on Pershing Drive. Here’s a map.
A spokesperson for Moe’s Southwest Grill confirmed the news and said she would be in touch once the location is ready to open.
There are more than 700 Moe’s in the U.S., including 10 in Connecticut. The first restaurant opened 19 years ago in Atlanta. The chain recently opened in New Jersey and offered free weekly burritos to the first 100 customers.
Derby’s Pershing Drive has undergone a complete turnaround over the past decade.
The former Valley Bowl property was redeveloped and Red Raider Plaza was repurposed. New arrivals include an Aldi’s grocery store, Panera Bread, Pet Valu, Planet Fitness, a walk-in medical clinic, Wayback Burgers and Jersey Mike’s.
Big Y is also working to redevelop the former Walmart at 656 New Haven Ave. into a grocery store. The city planning and zoning commission recently reviewed plans for an Asian fusion restaurant within that plaza as well.
In the downtown area, Retro Pub and Grub has been doing healthy business at 87 Elizabeth St., formerly home to Bar None.
Brickhouse Motorcycle Gear recently opened a shop at 129 Main St.
